Several years ago i ate at a georgian restaurant in Moscow, Russia. We ordered some muchrooms that had a thick slice of white cheese on top, served in a small cast iron skillet. I am in search of a recipe for this, or something similar. Can you help?
Looking into the Georgian mushroom situation for you
Bear with me, as this may take a while. Georgian cuisine is heavy on cheeses -- there's a famous cheese pie called khachapuri (more or less: the English-language spellings vary), but I don't think what you had is anything to do with that.
The closest I've been able to track down so far is a more mainstream-Russian dish called gribnoy Zhulien...chopped mushrooms in a white sauce with cheese on top -- but I don't think that was what you had, either: the recipe calls for Gruyére, and what you're describing sounds more like one of the Georgian cheeses like suluguni.
Anyway, leave the problem with me for a bit and I'll see what I can dig up.
