Iceland: Hrisgrjónaábaetir (Rice Dessert with Fruit or Berry Jam)

Title: Rice Dessert with Fruit or Berry Jam (Hrísgrjónaábaetir)

1 1/3 c Milk
1/4 c Rice
1/4 ts Salt
1 tb Butter
1/4 c Sugar
1 ts Blanched, chopped almonds
2 tb Sugar
2/3 c Whipping cream (or up to
-1 cup
1/4 c Berry jam
Heat milk. Add washed rice. Cook until rice is soft, about 1/2 hour.
Add salt, butter, almonds and sugar. Cool. Beat cream stiff and add
the 2 T sugar. Fold into the rice mixture. Serve in a glass bowl.
Make a depression in center and fill with fruit or berry jam.
