Ireland: Fraughan Sunday Cake with Fraughan Cream

      Title: Fraughan Sunday Cake with Fraughan Cream

MMMMM------------------------FOR THE CAKE-----------------------------
      6 oz Granulated / caster sugar
      6 oz Butter
      2    Eggs
      8 oz Self-raising flour
      3 tb Milk
      4 oz Fraughans / bilberries

MMMMM-------------------FOR THE FRAUGHAN CREAM------------------------
      2 oz Fraughans / bilberries
      6 fl Whipping cream
      1 tb Caster sugar / granulated
           -sugar
 
  Butter a 7-inch round pan.  In a bowl, cream the sugar and butter and
  beat the eggs in one at a time.  Sieve the flour into this mixture,
  adding enough milk to make a stiff mixture.
  
  Fold in the fraughans / bilberries, making sure they are evenly
  distributed through the mixture.  Transfer to the prepared pan and
  bake for 1 hour.  Remove from the pan and cool on a rack for 1-2
  hours before serving.  Serve with Fraughan Cream.
  
  For the cream:  in a bowl, mash the fraughans into a juicy pulp.  In a
  separate bowl whip the cream and caster sugar until stiff, and add the
  fraughans.  Serve chilled.
