Title: Sausage and Potato Pie

2 lb Floury potatoes (meaning
-any potato which comes up
-dry and flaky after
-boiling)
1 lb Pork sausages
6 tb Butter
2 tb Chopped parsley
1 1/4 c Milk, warmed
Freshly grated nutmeg
2 Egg yolks, beaten
2 tb Freshly grated Parmesan
-cheese
Salt and pepper
Scrub the potatoes and cook in boiling water until they are tender.
While they cook, skin the sausages, break up the meat with a fork and
fry until lightly browned. Drain the potatoes, peel, mash well and
add the butter and parsley. Add the sausage meat, warmed milk,
nutmeg and the rest of the ingredients, and beat well with a wooden
spoon. Put the mixture into a buttered dish and bake in a fairly hot
oven (190C / 275 F) for 30 minutes or until the top is brown.
