for 2 to 3 hours. Stir in vinegar, mustard, sugar, and dillseed. Potato
salad will be creamy. Serve at room temperature.

and vinegar. Heat to boiling, stirring constantly. Boil for 1 minute.
Carefully stir in the potatoes and crumbled bacon bits. Remove from heat,

Melt butter in a frypan. Place fish in frypan and pour hot water over
fish. Bring to a boil, cover, lower heat and simmer gently for 10

mayonnaise, sour cream, lemon juice, mustard, salt, and pepper. In a
separate bowl gently mix fish cubes, egg and pickle slices and capers.
Arrange fish mixture in individual dishes and spoon salad sauce over tops.
Chill for 30 minutes. To garnish, cut remaining egg into eight pieces
and chop beet slices. Arrange garnish on each serving. Serve
immediately.

6 slices bacon
2 T cornstarch
1/4 c water
1 c chopped onion
3/4 c diced celery
2 t salt
1 t granulated sugar
1/8 t freshly ground black pepper
1/2 c cider vinegar
6 c red-skinned potatoes, cooked
Fry the bacon in a large, heavy skillet until crisp. Remove the bacon,
drain on paper towels, then crumble; reserve the bacon fat.
Dissolve the cornstarch in the water. Saute the onion and celery in the
reserved bacon fat over medium heat for about 5 minutes, until the onions
are translucent.
Add the salt, sugar, pepper, and dissolved cornstarch to the skillet. Next
adfd the vinegar and bring to a boil over medium heat for three minutes.
Add the hot potatoes and crumbled bacon, stirring gently. Serve hot.
