Ireland: Chocolate Potato Cake

Potato is famous for making breads and cakes tender (and for improving their keeping qualities, too). This recipe adds potato to an excellent basic chocolate cake.
This recipe also uses grated chocolate rather than cocoa... so if you're into designer chocolates and you want to exploit the flavor of one of them in a cake, give this a try.
The ingredients:
- 1/2 lb butter
- 1 pound caster or granulated sugar (superfine works best if you have it handy)
- 4 eggs
- 8 rounded tablespoons grated chocolate
- 5 tablespoons ground almonds
- 1 cup cold sieved cooked potato (boiled in their jackets, then cooled and peeled)
- 10 ounces flour
- 1/2 teaspoon cinnamon
- 2 rounded teaspoons baking powder
- 1/2 teaspoon salt
- 3 fluid ounces milk
Sift the flour with the cinnamon, baking powder and salt. Cream the butter with the sugar until light and fluffy. Separate the eggs. Add the yolks, one at a time, to the creamed mixture. Stir in the grated chocolate and ground almonds. Add the sieved potato.
Add the flour alternately with the milk, beating gently until smooth after each addition. Whip the egg whites until stiff but not dry. Fold into the cake mixture.
Turn into a greased, baking-paper-lined springform pan / tin and bake 1 3/4 hours in a moderate oven (350F / 175C).
Frost with a favorite icing or frosting when cold: or simply dust with confectioners' / icing sugar.
