substituting veal for lamb
Can anyone tell me if substituting veal for lamb in the Dingle Pie recipe will work? I do not have access to truly good lamb, but do have access to good veal.

I'm betting veal will work perfectly well
Veal should be fine (lucky you, that you can get it: it's nearly impossible to get in Ireland). The only thing that would possibly would better would be kid. In fact, I sometimes wonder if the original Dingle Pie was kid, considering the connection with the Puck goat. But kid is hard to get here now as well.

Thank you. I was wondering but didn't want to make the dish until I checked it out. Sometimes you just can't substitute ingredients and have the recipe turn out correctly.
What is a Puck goat?
At the Puck Fair in Killorglin each year, they crown a goat king
